  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (8 ounce) package soy cream cheese (we love Tofutii)
  • 3 roma tomatoes, seeded and chopped (about 1 cup of your favorite sweet tomato)
  • 1 red bell pepper, seeded and chopped
  • 1 small sweet onion, chopped (about ½ cup)
  • 12 jalapeno pepper, seeded and chopped
  • 5 tablespoons soymilk
  • 1 teaspoon salt (we like to use sea salt)

  • Preheat Oven at 400 degrees.
  • In a large bowl, combine all ingredients and mix well (using your hands is messy, but effective!) Spoon into a baking dish (a small souffle or quiche dish would work well) and bake for 20 minutes, or until warmed through and slightly browned on top.

  1. Thought this was a little bland, but when I put it in a tortilla with cilantro and some extra spices it was great.
     
  2. Great alternative for spinach dip if you can't have the traditional one with dairy, the only thing we did different is added a tablespoon of garlic powder and some italian bread crumbs on top before we put it in the oven. Thanks!!
