Baked Steak Burrito Casserole

"This is a great introduction recipe to Mexican cooking. Yummy steak in melted cheese rolled up in a tortilla, covered in sauce! It doesn't use exotic ingredients and it isn't spicey. This recipe was a winner in a bake off contest that I found on a web site. A good hearty recipe for pot lucks, family gatherings etc."

  1. I had trouble making the amount of refried beans and steak spread around to all the burritos. Next time I will use more. And there will be a next time because this dish is excellent. Wonderful taste, impressive presentation and quick as a snap to prepare.

  2. We absolutely loved this meal!!! From the first bite, you had to close your eyes and think MMMmmmmm. I did make some changes: I used left over grilled steak (sirloin and rib eye) and white onion instead of green (Green onions would have tasted better, but I didn't have them). From reading Sheri's comment, I'm not sure why she didn't like the flavor, unless she used a yucky taco seasoning mix or enchilada sauce--I used Taco Bell and Gebhardt, respectively. I only made six burritos, stuffed full and filled the pan. This is a keeper!! and answer to left over steak! The only bad thing I have to say about this meal is the amount of dirty dishes. Since there are no vegetables in this meal, a side is needed--more dirty dishes. Anyway a fresh garden tomato salad seasoned with sea salt and fresh ground pepper completed the meal.

  3. I also had trouble making the ingredients spread around to all the burritos. I used big flour tortillas, maybe your recipe is for small size tortillas, maybe you should specify that in the recipe. I really didn't care for the taste of this recipe.

I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
