  • Cook sweet potatoes in boiling salted water for 30 to 40 minutes or until tender; drain and peel. Beat potatoes and butter until fluffy. Beat in eggs, orange peel, and 3/4 teaspoons salt. Stir in pineapple. Turn in 1 quart casserole. Cover and bake in 325 oven about 45 minutes or until heated through. Garnish with orange slices.
