ingredients
- 3 cups flour
- 1 1⁄2 cups sugar, preferrably organic
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup chopped walnuts (or pecans)
- 3 eggs, beaten
- 1 1⁄2 cups oil
- 2 cups mashed bananas
- 1 (8 ounce) can crushed pineapple, drained
- 2 teaspoons vanilla
directions
- Preheat oven to 350°F.
- Butter and flour 2 (9x5x3) loaf pans.
- Mix dry ingredients together and set aside.
- Combine wet ingredients in a large bowl and mix well.
- Add flour mixture to banana mixture and gently combine until just moist. Do not over-mix.
- Bake at 350°F For 65 minutes.
- Cool 10 minutes before removing from the pan.
