  1. Preheat oven to 400f.
  2. fit 12 muffin cups with paper liners.
  3. coat each with cookng spray.
  4. mix flour, walnuts, wheat germ, brown sugar, baking powder, cinnamon, salt, and nutmeg in large bowl.
  5. stir in bananas, milk, butter, and egg.
  6. mix just until blended.
  7. using an ice cream scoop, fill muffin cups evenly with batter.
  8. sprinkle with cinnamon sugar, if desired.
  9. bake muffins until a skewer inserted into centers comes out clean, 20-22 minutes.
  10. cool 1 minute, then remove from the muffin pan and cool on a wire rack.
