Banana Pudding Cake

- 1 (18 1/4 ounce) box yellow cake mix
- 1 (3 1/2 ounce) package instant Vegetarian banana pudding mix (use butterscotch if you can't find banana, the flavour will be a little different though)
- 1⁄2 cup mashed ripe banana
- 4 eggs
- 1 cup water
- 1⁄4 cup vegetable oil
directions
- Preheat oven to 350F; grease a bundt pan and set aside.
- In a large bowl, combine all ingredients and beat with your electric mixer for 3 minutes.
- Pour into prepared pan and bake for 50-55 minutes, or until a tester comes out clean.
- Cool for 15 minutes before removing from pan.
- If desired, combine 1 cup of sifted icing sugar with a little milk and drizzle this over the cake.

Super cake! My Grandaughters ages 4 & 5 love Banana Bread and this tastes almost the same but you get more than a loaf. I have made this recipe twice and it disapeared quickly both times. I do recommend baking it a little longer or the center doesn't seem to get quite done. Thanks Lennie for sharing.

Hey Lennie, This was so good! A very light cake, and packed with a lot of banana flavor. I prefer making this cake, than throwing together a loaf of banana bread. I didn't drizzle the cake with a powdered sugar frosting 'cause it didn't need it. It was sooo good with out it. I did use one small ripened banana, instead of the 1/2 c. that it called for. An "excellant" banana cake Lennie. Thanks for the recipe. I definately will be making this cake many times over, since it's sooo good, and sooo quick and easy to throw together.

I'll just add to the great reviews! I made this slightly differently than the posted recipe, taking other reviewers' advice and using 1 cup mashed ripe banana. I also used 1/2 cup unsweetened applesauce instead of the 1/4 vegetable oil and 1/4 cup of the water. The result was a very moist and tasty cake. I might cut back next time on either my amount of banana or applesauce to get a slightly drier cake, but that was my doctoring and not the recipes fault! I didn't glaze at all and served for a fellowship on the lawn after church. It was well recieved and DH says to make it again! Thanks for the great recipe to use up those old bananas!!

I always have banana's at home and always make banana bread when they're really ripe. I thought I'd try this since it yields more than a loaf and would last longer. I put in 2 medium banana's and used milk instead of water. Wonderful! I like it bcuz it's not too sweet. I didn't put any frosting on because at home we prefer not to. I'll be making this for a a get together this weekend and "Jazz it up" with coolwhip-pineapple frosting.

I'm in total agreement with everyone else...this was delicious, fast, & easy! And I DO NOT bake! I used 4 medium bananas because I had that many to use up, white cake mix, vanilla pudding mix, & milk instead of water as others said. My iceing was cream cheese, powdered sugar, vanilla, & a little pineapple/orange juice all whipped up together in my food processor. Every single ingredent came from the bargain grocery store too, which makes it very affordable as well! I will definately make this from now on when I have bananas to use up!!

Threw this together this evening for my daughters Bday. She wanted a Banana Cake and I could not find the recipe I usually use. This was moist and very good. I did not add the pudding- did not have any and did not have time to run to town- also used applesauce instead of oil. Wish my bananas were riper (sweeter). Topped with cream cheese drizzle. Will make again for sure. Thanks for posting.
