Banana Toffee Cream

"Due to my SO's job,he goes out of town quite often and sometimes I just don't like to eat alot of leftovers. So, I decided to start looking for recipes for just 1 or 2 servings.Time for chilling is cooking time. And this one was found in the 2003 edition of Taste of Home's " The Best Of Country Cooking ". It was sent in to them by Betty Fergurson of Edmonton, Alberta Canada."

  • 34 cup whipping cream, whipped (Original called for 1/2 cup whipped cream )
  • 12 cup English toffee bits or 1/2 cup almond brickle chips
  • 1 large banana, sliced

directions

  • Gently fold sliced banana and toffee bits into whipped cream until well blended.
  • Spoon into parfait glasses or dessert dishes.
  • Cover and refrigerate until serving. ( I recommend at least 2 hours ).
