Banana Walnut Loaf (Bread Machine)

"This is made in a quick bread/cake cycle - it is not a yeast bread. I have not tried it, posted in response to a request."

  • All ingredients other than buttermilk should be at room temperature.
  • Place ingredients in order indicated in pan. Select quick bread/cake cycle and medium crust and start machine.
  • After batter has been mixed for 4 minutes, stir sides and bottom of pan with spatula to ensure complete mixing. Allow to continue mixing. If your machine permits pausing, remove kneading paddle before baking. Continue to conclusion of cycle.
  • Remove bread from pan and transfer to wire rack to cool. Bread slices best when allowed to cool.

  1. I used the "sweet" bread cycle, and think that was a mistake because it was still dough at the end. LOL. So I did the shortest express bake and it came out perfect. Just a little crispy on the bottom, but of course my dear family said they like it that way. Flavor is fabulous. Next time I will just try the express bake cycle and see how that works out.

  2. This is the best banana bread recipe for ABM I've found yet. I've made it twice in the last 4 days. My 5 year old loves it!! The only tweaks I made was I left out the nuts, and because I don't keep buttermilk on hand, I used 1/3 cup + 1tbsp water and 1-1/2 tbsp buttermilk powder.

  5. Moist and delicious! I don't have the manual for my bread machine as it was a second hand ABM given to me by a friend. When do I add the nuts? I never heard a beep sound therefore I added them with about 1 hour bake time remaining-no problem! Thanks for posting!

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures. The cat wishes I would concentrate on meat and fish... I joined a few years ago but started posting recipes and participating in forums just recently - I wish I had done so earlier.
