- 2 tablespoons butter
- 2 tablespoons flour
- 1 1⁄2 cups skim milk
- 2 ounces cheddar cheese, grated
- salt and pepper
- 1⁄4 teaspoon dried mustard
directions
- Melt butter in small sauce pan until it stops bubbling. Add the flour, stir until fully incorporated. Cook over medium heat until the roux browns slightly.
- Add the milk slowly while whisking continually. Cook and stir over medium high heat until the sauce bubbles, then remove from heat.
- Add the cheese & mustard powder, stir gently until the cheese melts and incorporates completely. Season to taste.
