- 2 cups unbleached flour
- 1⁄4 cup granulated sugar
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1 cup milk
- 1⁄3 cup unsalted butter, melted (or 1/3 cup vegetableoil)
- 1 egg

- Preheat oven to 400*. Grease muffin pans. Sift flour. Then sift again with sugar, baking powder, and salt into a large bowl. Measure milk in a smaller bowl. Add melted butter or oil and egg. Beat with a whisk or fork to mix well. Make a well in center of flour mixture. Pour in milk mixture all at once. Stir quickly with fork until all flour is moistened. DO NOT BEAT OR OVERMIX. There may be a few lumps. Sisregard them. Quickly spoon batter into muffin pans. Bake 20-25 minutes, or until tops are golden and a wooden pick inserted in center comes out clean. Cool slightly on a rack. Turn out and serve warm.
