  1. Preheat your oven to 425 degrees and bring a cast iron skillet to super high heat over the stove.
  2. Use a paring knife to remove the rough "stem" of the sprouts and peel off the leathery outer leaves.
  3. Toss the sprouts into a mixing bowl with the olive oil, salt, and pepper. Pour this mixture into the cast iron skillet, making sure the sprouts are cut-side down. Immediately transfer to the oven.
  4. Roast for five minutes without touching, then add the garlic and shallot and give a stir. Roast for five more minutes.
  5. Remove from the oven and enjoy as a side dish or as part of a pasta or salad!
