Beef and Mushroom Skewers With Tangy Sauce

- 12 ounces lean beef steaks
- 1 red pepper, seeded
- 16 chestnut mushrooms

Sauce
- 2 tablespoons horseradish sauce
- 2 tablespoons light soy sauce
- 1 tablespoon fresh parsley, chopped
directions
- Cut the steaks into thin strips and the red pepper into chunks. Thread the beef strips, concertina-style, onto eight large skewers, placing a chunk of red pepper and a mushroom between each strip.
- Mix together the sauce ingredients in a small bowl, and add a little boiling water to form a coating consistency.
- Preheat the broiler to high. Place the skewers on a tray and brush lightly with the sauce.
- Cook under a preheated broiler for 5-8 mins, basting occasionally with the sauce.
- Serve straight from the broiler with boiled basmati rice (/2oz uncooked weight per person) and a tossed salad.
