Beef Stew With Cheese Dumplings (My Sister Debbie's Recipe)

  • In paper or plastic bag, mix flour and salt; add meat, a few pieces at a time and shake to coat.
  • In large Dutch oven, brown meat in oil.
  • Add water, bouillon cubes and pepper; cover and bring to a boil. Reduce heat; simmer 1-1/2 hours.
  • Add carrots, celery and onion; cook 15 minutes.
  • Prepare biscuit mix as package directs for dumplings, adding cheese.
  • Drop by spoonfuls over boiling stew.
  • Cook uncovered over low heat for 10 minutes.
  • Cover and cook for 10 minutes longer.

I am the retired mother of 4 grown children and grandmother of 9. I have always been passionate about cooking and unfortunately I am just as passionate about eating. My mother was the best cook I've ever known. Cooking was something we both enjoyed and could do together. She taught my 3 sisters and I how to cook, although I had more of an interest in and love of cooking. Through the years although I have added ingredients to some of her recipes they remain much the same as when she cooked them. Extended family members often comment when eating food I've prepared that it taste just like hers. That's the best compliment they could pay me. If I had to give a name to the type of cooking I do, I guess it would be Southern or Soul Food. My favorite restaurants are located in Pasadena, TX where I grew up. One is the Baytown Seafood located in Pasadena, where you can get the best fried shrimp and dirty rice I've ever eaten. This is a Texas based restaurant franchise but the restaurant near where I live now is horrible so when I visit Pasadena I get to enjoy their wonderful food. The others are Tacqueria Agave and The Tamale Factory where you can get authentic Tex-Mex food. My favorite cookbook is "The Newest Star in Texas," a cookbook I helped prepare. It was sold to obtain funds for the opening ceremonies at the VA Medical Center in Houston. Since I took part in the preparation many of my family's favorite recipes are included.
