  • Place onion and garlic in food processor.
  • Process until finely chopped.
  • Add 1/2 cup beer, ketchup and mayonnaise.
  • Process, then add cheeses.
  • Process until smooth.
  • For smoother consistency, add remaining beer and process.
  • Place in a container, cover, and refrigerate 1 week, to blend flavors.

  1. Well Mimi I had fun with this recipe. When I tasted it after I had made it I did not think I would like it. But it needed to mature for a week and the flavors became softer, the raw onion flavor disappeared during that time. I have used it during the week on bread, toasted tomato sandwiches, pasta dishes and thinned with sour cream as a dip! I did need more beer then stated in the recipe to get a smooth consistency.
     
  2. I love this recipe too! I don't recall where it came from, but it's quick and easy and depending on the beer you put in it normally has a nice bite to it to go with the heat from the jalapeno cheddar cheese. Thank you so much for posting this recipe!
     
  3. What did I do wrong? I followed the recipe and this just didn't work for me. I even let left it in the fridge for a week and it still didn't taste good. Maybe it was the beer that I used? The texture wasn't the greatest either. I used block cheese shredded. I am thinking this is my error, so I won't post a rating yet.
     
  4. Wow, was I ever lucky that I divided this in to two dishes for storage in the fridge. The kids didn't realize there was a second one, so I am actually going to get to have more than a taste tonight (DH and I get to have the evening alone together for a change)! I bought an assortment of snack crackers and the family used it as a spread during movies last weekend, even though it hadn't set for the 'recommended week'. Now that we're a couple days past the 'week', I anticipate some even better 'eats' tonight! Thank you for sharing another winner in my house Mimi!!!

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
