Best Ever Banana Muffins

"These are the only banana muffins I make now. I add chocolate chips to my batter and triple the recipe. These freeze great. I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". (Prep time is a guess.)"

  • Mash bananas.
  • Add sugar and slightly beaten egg.
  • Add melted butter.

  1. I used a cup of whole wheat flour and half-cup of oats, soaked in the liquids for a few minutes until soft. What a wonderful, moist, no-fuss muffin. Recipe doubled no problem.
     
  2. Amazing! Only thing I changed was instead of using 1 1/2 cups flour, I replaced 1/2 cup of rolled oats. I also added 1 cup of mini choc chips. Maybe only 1/2 cup next time! Definitely a keeper recipe!! My picky 4 year old LOVED them!!

  3. My mother used to make this recipe when I was little and I now use it because, after trying a lot of different banana muffin recipes, I have decided that this is definitely the best one.
     
  4. Love this recipe! It is now my go to for banana muffins. The recipe is very nice as is. I sometimes add finely chopped walnuts and some chocolate chips and top with a sprinkle of coarse sugar for the kids.... and adults lol.

  5. Usually I am a little skeptical about recipes which claim to be the best, but I must say these really are the best banana muffins ever. Wonderfully moist. I made 12 regular muffins, baked at 350 degrees for 15 minutes. Thanks for sharing.

  1. So I just made a batch of 30 mini banana mini muffins using the 1cup of wheat flour and 1/2 c. Instant rolled oats soaked in water, and the 1/2 cup of chocolate chips,then added 1 scoop of protein powder and 2table spoons of chia seeds and 1/2 teaspoon of almond extract. Cook time and temperature was the same. PERFECT moist energy banana muffin minis!!!!

  3. Just made a batch of 12 muffins based on this recipe and they are absolutely amazing! I did not have baking soda, so I added additional teaspoon of baking powder instead of it. Also, after incorporating the dry ingredients into the mix the batter seemed a bit dense, so I added 1/2 cup of milk. And they turned out heavenly! :)
     
  4. Used 1/2 cup each white and brown sugar, 4 bananas, tsp vanilla and tsp cinnamon. Best muffins ever!!!
     
  5. Added: 1/4 teaspoon ginger 1/4 teaspoon cinnamon A pinch of cardamom

Hi! My husband, four children and I live in NY. I think my love of cooking and eating?is in my blood. My Grandma (who was 100% Norweigan) was a wonderful cook and my mom & sisters are as well. I really enjoy baking the most. If I had some time off I would bake and look for more new recipes to try!
