  • Place a sheet pan in the oven on the middle rack and preheat oven to 450°F.
  • Arrange 5 slices of bread on a cutting board. Spread tops with a thin layer of mayo.
  • Flip bread over and top with 2 slices of cheese. Sprinkle with salt and a few grinds of pepper, then top with a third slice of cheese.
  • Top each sandwich with remaining slice of bread. Spread tops with a thin layer of mayo.
  • Brush tops with melted butter.
  • Carefully remove the hot sheet pan from the oven and quickly spray with nonstick spray.
  • Place sandwiches on the sheet pan, buttered side down.
  • Brush top side with melted butter.
  • Bake for 7 – 10 minutes, flipping halfway through, until golden brown and cheese is melted.
