  • Heat oil in large saucepan over medium heat.
  • Add onion and garlic and saute for about 5 minutes until soft.
  • Add chicken and cook over medium-high heat for 10 minutes.
  • Add red peppers, jalepeno pepper, mushrooms, tomatoes, and corn and saute for 10 minutes.
  • Add seasonings.
  • Stir in black beans, tomato paste, and vinegar and let come to a boil.
  • Reduce heat to low and cover. Let simmer for 20 minutes, stirring occasionally.
