Directions

  1. Into large bowl, place peas, red and green peppers, green onions, celery, tomato and parsley.
  2. In small bowl, whisk together vinegar, oil and orange zest.
  3. Add to salad and mix gently.
  4. Season with salt and pepper.
  5. Cover and chill.
  6. Remove from refrigerator 30 minutes before serving; taste and adjust seasoning if necessary.
