  • Put all dry ingredients into blender.
  • Blend just until combined.
  • Add remaining items, blend well.
  • Pour into unbaked pie shell.
  • Bake at 400 degrees for 30 minutes.

  1. REALLY good!! I did not use the coconut. I sprinkled pecan halves and chocolate chips on the top before putting in oven. Maybe that had something to do with the bottom of my crust not cooking all the way. My husband said that has happened to his crusts when he uses the glass pie pan (which is what I used). Next time, I'll bake it in a metal pan. Will make this again and again!
     
  2. We are eating this warm from the oven and thinking it is REALLY delicious! It's not a cream pie, but the texture is surprisingly smooth even with the coconut and pecans. This is one of the simplest pies I've ever put together! I made it exactly as written. I used my new Cuisinart stick blender for yet more convenience. I topped servings with whipped cream. Sweet, rich and enjoyable!
