Ingredients Nutrition

  • 8 jalapeno peppers, sliced in half lengthwise and cleaned out
  • 1 cup Simply Potatoes Sour Cream and Chive Mashed Potatoes
  • 12 cup blue cheese, crumbles
  • 16 slices quality lean bacon, baked until done but not crispy
  • sriracha hot chili sauce, for dipping


  1. Preheat oven to 375 degrees.
  2. In small bowl, gently stir blue cheese crumbles into mashed potatoes. Fill each pepper half with potato mixture.
  3. Wrap each with a slice of cooked bacon and place onto a parchment paper-lined baking sheet.
  4. Pop into oven and bake for 5-8 minutes until bacon crisps. Watch so that the filling doesn't ooze out.
  5. Remove to appetizers plates and serve with sriracha sauce for dipping.
