- 2 1⁄2 cups rolled oats
- 1 cup fresh blueberries
- 1⁄2 cup almond flour
- 1⁄4 cup granulated sugar
- 2 teaspoons baking powder
- 1 1⁄2 teaspoons cinnamon
- 3⁄4 teaspoon salt
- 1⁄2 cup unsweetened applesauce
- 1⁄2 cup plain nonfat Greek yogurt
- 1⁄2 cup almond milk
- 1⁄4 cup melted coconut oil
- 1⁄2 cup egg substitute
- 2 teaspoons almond extract
- 1⁄4 cup slivered almonds
directions
- Place first 7 ingredients in large mixing bowl and mix thoroughly.
- Place remaining ingredients in another bowl and whisk until smooth.
- Pour wet ingredients into dry ingredients and stir until evenly mixed.
- Bake in greased 9x9 pan at 350 for 25-30 minutes, until toothpick comes out clean.
