- 1 cup all-purpose flour
- 2⁄3 cup sugar
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄4 cup salt
- 1 large egg, at room temperature
- 1⁄2 cup buttermilk
- 1⁄4 cup butter, softened
- 1⁄2 teaspoon vanilla extract
- 1 cup blueberries (fresh or frozen, unthawed)
- 1 tablespoon sugar
directions
- Preheat oven to 400 degrees.
- Spray a 9-inch round metal baking pan with nonstick baking spray with flour.
- In a large bowl, whisk together flour, 2/3 cup sugar, baking powder, baking soda and salt.
- Add egg, buttermilk, butter and vanilla to flour mixture.
- Using an electric mixer on med-low speed, beat for 1 minute, until blended.
- Scrape sides and bottom of bowl with a spatula.
- Beat on medium speed for 1 minute.
- Spread batter evenly in prepared pan.
- Sprinkle blueberries evenly over batter.
- Sprinkle evenly with 1 tbsp sugar.
- Bake for 25-30 minutes or until a pick inserted in the center comes out clean.
- Let cool in pan on a wire rack for 10 minutes, then invert cake onto plate.
- Serve warm or at room temperature.
