Bran and Carrot Muffins

"While you can cook these straight away after mixing in the ingredients it does taste better if you let the mixture sit for an hour. I normally cover the top of the mixing bowl and leave it in the fridge. I would almost say it ferments slightly so don't be alarmed. Warning - eating the raw mixture may taste really good but not in large quantities as the bran really works."

  • Cream the egg and sugar.
  • Add the oil, vanilla and milk. Beat well.
  • Add the flour, salt , bran and bicarbonate of soda. Mix.
  • Add the raisins.
  • Leave to stand overnight.
  • Stir in the morning.
  • Bake at 180C for 20 minutes.
  • Variations: Add grated carrots, grated apple or nuts You can add apple puree in place of half of the milk.
