  • Dissolve baking soda in milk.
  • Mix all ingredients together and pour into a muffin tin, using either nonstick pan or paper liners.
  • Bake 325F for 25 minute.

  1. This muffin is super easy to make and has simple healthy ingredients but it is very dense: A no nonsense, all work and no play kinda muffin.
     
  2. The first time I made this I used almond meal instead of corn meal and it was good but a little bland so I just made it again (in a loaf) with the almond meal but added chopped pecans, chopped prunes and a little cinnamon. Boy, is it good!!!
     
  3. This is an excellent bran muffin recipe! A lot of times bran muffin recipies will call for two different types of bran cereal instead of just the one which makes it much more expensive. I also love the cornmeal which gives it an extra bit of crunch. I also used chocolate chips instead of the raisins to help calm my sugar craving!! Will definitely add to cookbook!
     
  4. This recipe makes a very dense muffin....good for those wanting to up their fibre intake. I mixed all the dry ingredients together first, including some raisins, not the baking soda though. The baking soda I mixed into the milk. This I then mixed in along with the molasses (golden syrup in my case) to the dry ingredients until just mixed. I baked at 350'F for approx 20mins. Will certainly make these again as they were very easy to make :)
