  1. Melt butter in a 6 quart pot over medium heat. Add onions: cook, covered until tender and beginning to brown (10-15 min). Uncover and increase heat to med-high. Cook until dark brown and caramelized (5-7 min) more. (Onions can be made and chilled in pot, covered, up to 3 days ahead.).
  2. Prick each bratwurst once or twice with a fork to prevent it from exploding as it cooks. Add to onion mixture, along with beer, water, salt, black pepper and red pepper. Bring to a boil over high heat. Reduce heat to medium-low and simmer, uncovered (12-15 min or until a meat thermometer inserted in centers register 165F). Remove bratwursts and onions with tongs and a slotted spoon, reserving cooking liquid for another use such as simmering more brats.
  3. Preheat grill to medium-high heat (375-450) and lightly oil grate. Add bratwursts; grill (10-14 min), turning occasionally to brown evenly. Serve on buns with drained onions.
