- 1 lb link sausage
- 6 eggs, beaten
- 1⁄2 lb grated sharp cheddar cheese
- salt and pepper
directions
- Preheat oven to 350°F.
- Cook sausage in oven proof pan (I use cast iron).
- Remove cooked sausage and drain well; add eggs, sausage, and cheese.
- Bake in oven until eggs are set.

This is perfect for a quick & delicious breakfast in the morning. No having to fix it the night before. No bread, and great for a gluten-free diet. This is my go-to casserole. Simple, no bells and whistles here, just good comfort food & filling. I've made this several times. Thanks for this recipe!
