  • Place tortillas in heated 12-inch skillet (or on a griddle).
  • Evenly sprinkle cheese over the top of flour tortillas.
  • Place scrambled eggs on top of cheese on one tortilla. Evenly distribute the cooked, crumbled sausage over the eggs.
  • Allow cheese to melt.
  • Top with diced tomatoes and green onions.
  • Place second flour tortilla with melted cheese on top.
  • Remove from skillet; cut into six equal wedges.
  • Serve with guacamole, sour cream and salsa.
  • Refrigerate leftovers.

  1. The two of us split this for dinner and really enjoyed having a different kind of quesadilla. We used extra tomatoes and all the optionals (and assumed 20 inches of tortillas was food.'s translation of your input of two 10 inch tortillas). The guacamole went great with these. I could see them working well with corn tortillas too, and even with some crunchy tortilla chips on the side.
     
  2. We made this for "breakfast for dinner" and really enjoyed it. A little more work than a breakfast burrito since everything was cooked separately to assemble. But the crispness on the tortilla was well worth it and this was fabulous. I added fresh jalapenos to my serving and garnished with diced avocados and crumbled queso fresco. We doubled the eggs and made enough for 2. Also doubled the sausage.
