ingredients
- 1 cup cheddar cheese, grated
- 3⁄4 cup flour
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon dry mustard
- 1⁄4 cup butter, soft
- 1 1⁄2 cups broccoli florets, steamed
- 1 cup evaporated milk
- 1 cup onion, chopped
- 1 cup mushroom, sliced
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon nutmeg
- 1⁄2 cup cheddar cheese, grated (or more)
- 3 eggs, lightly beaten
- pepper, to taste
directions
- Combine the first 5 ingredients and press into a 9-inch pie plate.
- Place broccoli in pie plate.
- Combine milk, onion, mushrooms, salt, nutmeg and pepper in a saucepan and simmer for a few minutes.
- Stir 1/2 cup of this mixture into the eggs, then add eggs into the hot mixture and pour over the broccoli.
- Bake at 400F for 15 minutes, reduce heat to 375F and continue baking for another 30 to 35 minutes or until firm.
- Sprinkle final 1/2 cup cheese on top of pie.
- Let stand 5 minutes and serve.

Had this for dinner tonight, searched recipes based on the ingredients we had and this one was just perfect. Very easy to make - doubled the quantities so took longer to cook, but you'd expect that. I made a gluten free version using GF flour and it worked great and was yummy. I had hubby chopping up the vegies while I was preparing the base, then got him to do the washing up while I combined the mix, put it in the oven and put my feet up. Highly recommend using the hubby in this way! LOL
