Broccoli and Pancetta Saute

- 1 1⁄2 lbs fresh broccoli, trimmed and cut into 4-inch spears
- 3 tablespoons extra virgin olive oil
- 1 ounce pancetta, diced
- 4 garlic cloves, quartered
- 1 pinch hot pepper flakes
directions
- In a large skillet, heat the oil over medium-low heat.
- Cook the pancetta, garlic and hot pepper flakes, stirring occasionally, until the garlic is golden and the pancetta is crisp, about 5 minutes.
- Stir in the broccoli and 1/4 cup water.
- Cover and cook until tender-crisp, about 8 minutes.

<p>I live with my husband, four cats, and a sweet mutt named Jada in Scarborough, Ontario, where I work as an elementary school administrative assistant.
