Broccoli & Egg Parmesan

"This is another one of my Mom's recipes. I can remember Mom making this 40 years ago, but that is only my recollection. This is not a recipe with precise amounts, but "YOU CAN'T GO WRONG". If you like the ingredients in this recipe, then you are going to LOVE the results."

  • Divide broccoli into flowerets.
  • Steam or cook in salted water until almost tender.
  • Drain.
  • Arrange in a single layer in a shallow baking dish.
  • Drizzle a little oil over the top of the broccoli.
  • Sprinkle a large clove of garlic that has been minced over the top.
  • Sprinkle with salt& pepper.
  • Beat the 4 eggs with a tablespoon of water.
  • Pour over the top of the broccoli.
  • Top with some grated parmesan cheese.
  • Bake at 350 degrees 20 minutes or until tender.
  • Enjoy!

  1. Very nice appearance and texture combination. I'd probably add a few more seasonings next time. After 20 minutes I had to turn the heat up to 400° for another 10 minutes in order to cook the eggs. The casserole was at room temp when I placed it in the oven.
     
  2. This is a very tasty dish....prepared it exactly as called for, and enjoyed every mouthful! It's a keeper.

<p>I was born and raised in Connecticut. I love the New England area, I think it is so pretty with the change of the seasons. <br /><br />I work for an ambulance company in their wheelchair division for non-emergency transportation. I work in the billing and customer service office. I love my job, the duties are so varied that you are always working on something different....no time for boredom. <br /><br />I am a mother to four, two sons and two daughters. <br />All have left the roost to start there own family. At last count, I was a granny to 6 boys and 2 little girls. <br /><br />I love Recipezaar and all the new daily postings. I see so much I want to try and continue to save them. I just don't have all the time to make all these recipes. I lost my husband in July 2006 and I am not the spring chicken anymore...pretty tired when I get home from work...so it's all quick, quick, quick, for me. <br /><br />I have tried a few....and have been pleased with my results and the new taste sensations. I am trying to initiate a goal of trying at least two new recipes a week.
