Broccoli With Cheese Sauce

- 2 cups broccoli (fresh or frozen)
- boiling water
- salt
- 5 tablespoons butter
- 2 tablespoons flour
- 3⁄4 teaspoon salt
- 1⁄2 cup milk
- 1 cup cheddar cheese, shredded
directions
- Place broccoli in boiling water and add salt. Cook until tender. Drain well or it will turn your sauce into a soup.
- For cheese sauce: In separate saucepan melt butter over low heat. Gradually stir in flour until smooth.
- While stirring constantly, add milk slowly. Stir until smooth. Add salt and cheese, stirring until cheese is melted. Don't overcook.
- Serve broccoli with cheese sauce on top.

I made exactly how the directions are written out and it came out thick, not saucy. By any chance would you happen to know why this happened but so I can make t better next time! To add, my son is four and has G.I. Problems. This is the first time in FOUR years that he has fully eaten a veggie. Thanks to your yummy cheese sauce!!

The sauce was good, but I'm reducing by one star because the scale was so far off. My husband usually doesn't think there's such a thing as too much cheese, but he even thought it was "soupy." I scooped out the extra, and I probably had at least a third remaining. I'd suggest making this much sauce for 3-4 cups of broccoli (or other vegetables). By itself, the sauce was a little salty, so don't salt your vegetables separately unless you've already tasted it with the sauce.
