Broiled Lemon Herb Chicken

  • Pound breasts to flatten slightly.
  • Squeeze lemon juice into plastic bag; toss in the lemon wedges.
  • Add remaining marinade ingredients.
  • Place chicken in bag; turn to coat.
  • Place in refrigerator for 3 hours or up to 24 hours.
  • Preheat broiler.
  • Remove chicken; discard marinade.
  • Broil, 6 inches from heat for 5 minutes; turn and broil an additional 5-8 minutes, until juices run clear.

  1. I really meant to marinate the chicken breasts before I left for work this morning, but I forgot. Sooooo...when I got home I basted the chicken with the marinade while I broiled, then poured the drippings over the chicken and served. Yumdiddlyicious! Thanks for a great recipe!
     
  2. Great chicken! I used all fresh herbs, marinated it overnight and threw it on the grill. It came out really moist and flavorful. I am going to try this with fish next! Thanks for the post!
     
  3. Delicious and tender chicken! I also did not marinate overnight and only had 2 lemons available..still came out delicious. Very easy to prepare. This one will definitely be a keeper.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
