Broiled Salmon With Basil Sauce (Convection-Microwave)

- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1⁄4 cup white wine
- 2 tablespoons lemon juice
- 1 cup fresh basil (or substitute with 1/2 cup fresh parsley & 2 Tablespoons dried basil)
- 1⁄4 cup parmesan cheese, grated
- 1⁄2 teaspoon Dijon mustard
- 4 salmon steaks (1-1/4 to 1-1/2 pounds, or substitute with haddock, halibut or swordfish)
- cayenne pepper, to taste
directions
- Combine oil, garlic, white wine and lemon juice in blender.
- Add basil, Parmesan and mustard. Blend until smooth.
- Preheat oven for broiling.
- Put one-fourth of basil sauce in bottom of 9-inch oven-safe dish.
- Arrange steaks on sauce and pour remaining sauce over tops of steaks.
- Sprinkle with cayenne pepper.
- Place dish on broiling trivet and broil in preheated oven for 20-24 minutes or until fish flakes easily when tested with a fork.
