  • Preheat oven to 350 degrees F.
  • In a large bowl, cream butter and sugar.
  • Add eggs and vanilla.
  • Add flour and salt; mix well.
  • Drop dough (the size of a marble) on greased cookie sheets leaving quite a large space between each.
  • Press a pecan in the center of each.
  • Bake 14 to 15 minutes.

  1. EXCELLENT, just like the recipe I lost from my mother. A light and delicate cookie. Perfect with tea. I make mine larger than "marble" size. My mother never made them with pecans, so my preference is biased toward no nuts -- you cannot mess with childhood memories! :-)
     
  2. Excellant Recipe! Finally, I can enjoy Brown Edge Wafers again. Per the recipe, these cookies came out about 1 1/2 inches (4 cm) in diameter and about 1/3 inch (1 cm) thick. I learned to love these cookies via the store-bought version that Nabisco used to sell, which were larger in diameter and a little thiner. To emulate them, I made mine using 1 inch (2.5 cm) balls of dough which I flattened to 1/4 inch (baking time was the same). It made about 45 cookies. I also increased the vanilla to 1 1/2 tsp... just because I LOVE vanilla. I didn't have any pecans, so I left them out.
     
  3. Excellent recipe! This was a family favorite for generations, but the recipe died with my great aunt. I made them this year to surprise my family and they were a definite hit! I agree that the pecan is totally unnecessary -- this is a pure food and should not be adulterated :0) Also, I made my second batch a bit larger than called for in this recipe. This allows for more contrast with the buttery-yellow centers and the crispy brond edges. A definite must-make for the holidays!
     
  4. Although mine didn't set up like brown edge cookies, they were good. I grated some lemon zest and put a little lemon juice in them. They would be really good with a little light lemon icing on them. Thanks for the recipe.

I live in to Jacksonville, FL with my husband, 2 daughters (17 and 11), 4 cats, and 2 dogs. My favorite things to make are cookies/bars and pound cakes.
