  • Cook sprouts by either steaming or boiling in water, then drain.
  • Saute onion in butter till tender.
  • Stir in flour, mustard, and tarragon.
  • Cook for a minute.
  • Add broth and vinegar and cook again till thick and smooth.
  • Pour over sprouts and serve.
