- 10 -12 English muffins (or less if they are large)
- 6 eggs
- 1 cup heavy cream
- 2 tablespoons frozen orange juice concentrate, defrosted
- 2 tablespoons orange zest
- 1⁄4 teaspoon cinnamon
- 1⁄4 cup firmly packed brown sugar
- 3 tablespoons butter
directions
- Preheat oven to 375 degrees.
- Break eggs into a large bowl.
- Add cream, juice concentrate, zest and cinnamon.
- Using a whisk, beat until mixed well.
- Using 1 tablespoon butter, grease a large casserole dish.
- Take half of the english muffins and place in the casserole,sightly overlapping.
- Pour half of the egg mixture over muffins, pressing down on them to make sure they soak it up.
- Sprinkle with half of the brown sugar.
- Add the rest of the english muffins, egg mixture and brown sugar, in that order.
- Dot with remaining butter.
- Bake in oven for 30 minutes to an hour.

This was excellent! We all loved the orange-cinnamon mix and the different texture the english muffins gave it. I couldn't find the bread either but the muffins worked out great. I wasn't sure if it was going to need syrup or not but one taste and I knew this recipe stands on its own! Thanks Kari (and Fran and Dennis!)

Kudos to you Kari!!! Thanks for the wonderful breakfast my DH and I had this morning. I followed your recipe exactly as you wrote it, using 8 slices of English Muffin bread. I baked it for 40 minutes and it turned out just perfect. If my DH wants this every Saturday morning.....you'll be in big trouble!!! I try not to spoil him too much!!! You created a super tasting recipe and we thank you for sharing with us.
