Busia's Polish Kluski

"I got this recipe from my husband's grandmother. The first time I tried to make them, I didn't realize they were supposed to be small, like gnocchi or spaetzle, and I made them the size of golf balls - we still laugh about it! My kids can eat a whole bowl by themselves - a nice side dish with roast pork."

  • Mix all of the above ingredients together,except bacon, adding just enough flour to make a doughy consistency.
  • Bring a large pot of water to a rolling boil and add 1 teaspoon of salt to the water.
  • Smear potato mixture on a small saucer and flick about one inch pieces into the boiling water.
  • Start with just a few pieces - if they break apart, you need to add more flour to the mixture. If they stay together in the boiling water, cook until they float to the top, then cook another 3-4 minutes.
  • Drain well and put into a casserole.
  • Cook bacon pieces in a small frying pan until crisp, then dump grease and bacon over the top of the kluski - toss to coat.
  • Serve warm with pork and applesauce.

  1. These made me feel like a kid again! They were delicious served with RECIPE #65899. I had the leftovers a few days later with Recipe #344319 and the gravy was a great addition as the prior review suggested. I'll definitely be enjoying these again! Made and enjoyed for PAC Spring '09.
     
  2. These are to die for. A staple in my home as a child. Nobody grates potatoes anymore, now just cut up the spuds and put them in a blender or processer. I usually add salt and black pepper to the mix before boiling We used to add chopped onion to the bacon and add the kluslies into the frying pan to mix and brown them a bit. Apple sauce goes great with this but the pork gravey goes well with this also.

I was a stay at home Mom for 24 years, then almost 5 years ago I went back to my nursing career (lots of changes in 24 years!!) I worked as a well baby nurse for 4 years and now am a nurse in a newly opened pediatric emergency room.
