Butter Beans and Bacon Stroganoff

  • Heat the oil and sauté the bacon until crisp.
  • Remove from the pan with a slotted spoon and set aside.
  • In the same pan, heat the butter and sauté the onions and the paprika until the onions are soft.
  • Add the mushrooms and sauté until soft.
  • Remove from the heat and stir in the flour.
  • Return to the heat and slowly stir in the milk.
  • Add the sour cream, bacon, butter beans, tomato paste and seasoning to taste.
  • Simmer over low heat for 2-3 minutes.
  • Sprinkle parsley on top just before serving.
  • Serve on rice or tagliatelle.

  1. Wonderful! I replaced the bacon with a vegetarian sub and followed the rest as is. Very easy and very, very tasty. We had it with orichiette pasta and I had the leftoveres on granary toast the next day yum! It's been safley stored in my cookbook!

On my to do list is learning to quilt,knit fair isle and bottle preserves properly! I live at the Coast and have done so for the last 5 years,its certainly a slower pace of life here than when we lived in the city. There is something very restful about living so close to the Sea even the storms are spectacular to watch.One of My wishes is to spend a weekend in a Light house,preferably in rough weather! I,m also *Mum* to 4 dogs(all girls!)Millie the boxer,Jessie the cross border collie who is slightly mad to say the least!and my 2 little Jack Russells Molly and Mandy who have me running about all over the place I wish I had their energy!I,de bottle it and make a fortune!
