- 3 tablespoons olive oil
- 4 teaspoons lemon juice
- 1 teaspoon prepared mustard
- 2 cloves garlic, minced
- 6 cups romaine lettuce, torn
- 1 cup salad crouton
- 1⁄2 cup shredded parmesan cheese
- 1⁄8 teaspoon ground black pepper
directions
- Mix oil, lemon juice, mustard and garlic well.
- Combine romaine, croutons, parmesan, and pepper in salad bowl.
- Drizzle with dressing.
- Toss to coat.

The proportions of lemon/oil/mustard/garlic in the dressing are perfect for many uses - for any salad and as a marinade for chicken/fish (grill and add to the salad!) I multiply the dressing by 10 and keep it in the fridge as an all-purpose vinaigrette (1 week max.). Also, although parm does add a salty taste (MizzNezz must have had this in mind as the recipe omits salt) I find that adding salt to taste in the dressing improves the salad. This is one of my family's favorite salads. They can't get enough - especially when the croutons are homemade from leftover baguette/olive oil/ garlic. Also - go ahead and be generous with the parmesan - you won't regret it. Yum yum.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
