Cajun Chicken Florentine

  • Put noodles on to boil, and boil according to package directions.
  • In the meantime, make sauce.
  • In a medium sauce pan, melt butter.
  • Add flour and blend well.
  • Gradually whisk in milk, spinach, cheese, garlic powder, salt and pepper.
  • Cook over medium heat until thickened, stirring frequently.
  • Cover and reserve.
  • Heat oil over medium high heat in large fry pan.
  • Sprinkle chicken liberally with cajun seasoning, and sear chicken on both sides, reduce heat to medium and cook thoroughly (about 10-15 minutes), turning occasionally.
  • Serve noodles on plate, top with a chicken breast and spoon sauce over.
  • Garnish with freshly chopped parsley and extra parmesan cheese if desired.

  1. The cajun seasoning and spinach are a great combination, and the recipe is super easy to prepare. Next time, I think I will grill the chicken and substitute half and half for the milk, increasing the amount to 2 1/2 cups. Other types of pasta could be used, despending on what is in your pantry - farfalle or orzo would be good, too. Thanks for a great recipe!
     
  2. This was a GREAT dish, but I have to give it 4 VS 5 stars because I made a few changes to it and it was a bit too hot (possibly from my changes). I had actually sliced the chicken breasts before seasoning them, and maybe the extra surface area with the cajun made the hotness too hot. My other small changes were I used a combo of (skim) milk, half/half and heavy whipping cream; 1 1/4 cup, 1/2 cup, 1/4 cup. I also only added about 3-4 oz of spinach. But if I get the heat under control this will be a favorite! The sauce is fabulous, not too rich, not too cheesy. The spinach is a great addition, and the sauce is a great balance to the heat of the cajun.
     
  3. I thought this was an excellent dish. The only changes I would make would be to make extra sauce because I like mine extra-saucey!! Would also be GREAT with shrimp.
