  • Add all of the ingredients in a pot EXCEPT the cheese. Let the vegetables cook for about 20 minutes medium heat. I like to let the vegetables cook and reduce the liquid (to let the the vitamins from the vegetables reduce). The last 10 minutes add the cheese and let the entire pot cook on low heat. This will let the flavors blend. Please watch the pot. It just depends on the amount of zucchini that you use! It should be moist with a bit of liquid when you add the cheese and let it cook for about 5 to 10 minutes.

I was born in Pennsylvania but moved to Arizona when I was 16 with my family. My brother had asthma and the damp climate in PA was not good for his health. My mother (a single mother--my father died when I was 6) moved my two sisters and my little brother to Arizona. No family-new territory-no friends, quite a change!! I am a Postmaster and have worked for the United States Postal Service for 25 years. I am thankful for the career that I have with the Post Office. I have been able to provide very well for my family. My favorite cook book is anything that Paula Deen has written. Yes, I know, comfort food. I think she's great. My passion is my family. I have two children and my husband has three. Together we have two boys and three girls and eleven grandchildren! I am married to the most wonderful and the handiest man in the world. He is a carpenter, an electrician, a master tile layer, a plumber, a master mechanic, a builder and yes a retired Postmaster! I am blessed!! I am a "new" love to cook person. I have always been an adequate cook because I was a single mother with two small children. I never really liked to cook until I actually found the time to enjoy it! As I got older I realized that I really love to create not only great food but recipes. I began to experiment with Mexican food which I absolutely love. My children are half Hispanic and my husband's children are half Hispanic as well. So, our combined family grew up in Arizona eating and loving Mexican food. Enchiladas and chicken tacitos are my specialties, tacos and tostadas are my husbands. We also love refried beans made the old fashion (fattening way). When I visit my daughter in Georgia, she always asks me to make her chicken tacitos with guacamole (her favorite). We also love calabacitas--a squash (zucchini) dish with tomatoes, onions, garlic and cheese that is so easy to make and very delicious. My other love of food is Italian!! YUM! I have not posted a recipe yet because I am still working all the time and am very busy. I love recipezaar!! When I want a special recipe or something fabulous for guests, this website is the first place I visit! Thanks for giving me inspiration!! The cooks on this site are more than fabulous--I have loved every recipe that I have tried!!
