- 1 1⁄2 cups vegetable oil
- 1 1⁄2 cups sugar
- 1⁄2 cup packed brown sugar
- 3 eggs
- 3 cups flour
- 2 teaspoons cinnamon
- 1⁄2 teaspoon nutmeg
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 3 cups finely diced and peeled apples
- 1 cup chopped walnuts
- 2 teaspoons vanilla

Caramel frosting
- 1⁄2 cup packed brown sugar
- 1⁄3 cup light cream
- 1⁄4 cup butter
- 1 dash salt
- 1 cup powdered sugar
directions
- Mix oil and sugars.
- Add eggs, 1 at a time, beat well after each.
- Mix dry ingredients, add to batter and mix well.
- Fold in apples, walnuts, vanilla.
- Pour into greased and floured tube pan.
- Bake at 325* for 1-1/2 hr, or until cake tests done.
- Cool.
- Frosting: Heat on low, brown sugar, cream, butter and salt until sugar is dissolved.
- Cool to room temperature.
- Beat in the powdered sugar until smooth.
- Drizzle over cake.

Another winning recipe from MizzNezz! I made this in a bundt pan,took it to a potluck supper and it got rave reviews. I used about 3/4 cup of oil and 3/4 cup of applesauce to cut the fat. Also, I was worried about allergies to nuts so I didn't add the walnuts and instead used 1/2 cup of oats to give it a bit of texture. There is a lot of wonderful, gooey caramel frosting -what a treat! My cake took 1 hour and 20 minutes to cook. The cake is very moist and very tasty - and tastes just as good the next day. Definitely a keeper!

Good cake. I used granny smith apples. The caramel flavor icing compliments the mild apple spice flavor of this cake nicely. I used a 9x13 pan since I didn't have a bundt pan. I baked the cake for an hour and ten minutes and it was slightly over baked. I think that the ideal baking time for this cake in a 9x13 pan would be an hour.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
