  • Mix sugar, oil and eggs.
  • Sift flour, soda, salt, baking powder and cinnamon and add to the sugar mixture.
  • Add the carrots and nuts.
  • Bake at 325 for 30-40 minutes or until a toothpick comes out clean when poking in the center of the cake.
  • I use Betty Crocker Whipped Cream Cheese frosting for this, but the Icing recipe is as follows: 1 box powdered sugar, 8 oz. cream cheese, 2 teaspoons vanilla, 1/2 stick butter. Cream all ingredients together and frost a completely cooled cake. Enjoy!
