  • Place raisins in boiling water for about 5 minutes to soften and"plump" them up.
  • Make sure pineapple is well drained.
  • Mix all ingredients together and chill at least 1 hour before serving.

  1. As I mixed this I added about 2 tbs of the water that the raisins were boiled in. I think pineapple tidbits would work much better then the chunks. I would not use crushed is I feel it may add to much pineapple liquid. Everyone enjoyed this salad very much.
     
  2. There were many recipes for Carrot Rasin Salad, but this one sounded the best - and after making - so glad I did. The Pineapple and Coconut just give it that little extra - it was wonderful - and healthy. I had fresh carrots from the garden and this was a great way to use them. Thanks
     
  3. This is good! I used well drained pineapple tidbits instead of chunks and added back about 2 tbsp of the pineapple water to the mayo.
     
  4. A nice change from regular lettuce salad and a colorful addition to our Easter meal. I used ff mayo and it still was very good.
     
  5. This stuff is the bomb. Me and my wife love it. This is tastes almost identical to Chick-Fil-E carrot & raisin salad. My alterations are as follows. I only use a one pound bag of carrots. Still use a 1/2 cup of raisins. I cut the cocunut and pineapple tidbits to 1/4 cup and the mayo to 1/2 cup. I like to have the extra raisins in there. I also add some of the pineapple juice back in once I get everything mixed together it adds alittle extra something.

  1. This is good! I used well drained pineapple tidbits instead of chunks and added back about 2 tbsp of the pineapple water to the mayo.
     
  2. This is a delicious and refreshing salad for a hot summer day. I used Miracle Whip instead of mayonnaise for some added zip and tidbits instead of pineapple chunks.I chilled it overnight which allowed all the flavours to blend and the end result was a wonderful and tasty treat!
