  1. Heat the butter and oil together in a medium-large pot.
  2. Saute the leek and onion on low 5-6 minutes until soft.
  3. Add the celeriac, celery, garlic and ground pepper and saute 2 minutes more.
  4. Add the broth and potato and bring to a boil.
  5. Simmer about 30 minutes until celeriac is very tender.
  6. Puree in batches in a blender or food processor, then return to the pot.
  7. Add thyme, parsley and parmesan.
  8. Serve sprinkled with extra parmesan or white cheddar if you wish.
