  • Heat the butter and oil together in a medium-large pot.
  • Saute the leek and onion on low 5-6 minutes until soft.
  • Add the celeriac, celery, garlic and ground pepper and saute 2 minutes more.
  • Add the broth and potato and bring to a boil.
  • Simmer about 30 minutes until celeriac is very tender.
  • Puree in batches in a blender or food processor, then return to the pot.
  • Add thyme, parsley and parmesan.
  • Serve sprinkled with extra parmesan or white cheddar if you wish.
