Celeriac Soup With Parmesan

- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 leek, finely chopped
- 1 onion, diced
- 1 celeriac, peeled and cubed
- 1 stalk celery, chopped
- 1 -2 garlic clove, minced
- ground pepper
- 1 potato, peeled and cubed
- 4 cups low sodium vegetable broth or 4 cups low sodium chicken broth
- 1 tablespoon fresh thyme, finely chopped (optional)
- 2 tablespoons parsley, chopped
- 1⁄2 cup parmesan cheese, grated
directions
- Heat the butter and oil together in a medium-large pot.
- Saute the leek and onion on low 5-6 minutes until soft.
- Add the celeriac, celery, garlic and ground pepper and saute 2 minutes more.
- Add the broth and potato and bring to a boil.
- Simmer about 30 minutes until celeriac is very tender.
- Puree in batches in a blender or food processor, then return to the pot.
- Add thyme, parsley and parmesan.
- Serve sprinkled with extra parmesan or white cheddar if you wish.
