  • Beat sugar and oil in large bowl until well blended; add pumpkin, egg and orange peel and beat well.
  • Add combined oats, flour, cinnamon, baking soda and salt, stir well.
  • Fold in prunes and walnuts.
  • Drop by tablespoonfuls about 2 inches apart onto cookie sheet lightly coated with cooking spray.
  • Bake at 350 degrees 11-13 minutes or until lightly browned.
  • Cool completely, then drizzle glaze in strips. (blend powdered sugar and orange juice to make glaze).

  1. This is certainly a different way for me to make oatmeal cookies, what with the pumpkin, orange & prunes ~ Different & oh so tasty! Loved the final product & will definitely be making them again! And, as many smoothies as we consume, I'm intrigued with Toni in Colorado's using a couple in her smoothies!   3. I'll try one more time (3rd time). I made these awhile back and thought they are a good cookie. I make a smoothie each a.m. and add 2 of these cookies. I also freeze the batch and just take one or two out of the freezer to have as a snack. Thanks for the recipe, Stingo.
