- 1 1⁄2 lbs pork loin
- 1 cup uncooked dry beans (I use pinto)
- 1 -2 clove garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1⁄2 onion, finely chopped
- 1 (4 ounce) can green chili peppers
- 1⁄2 teaspoon oregano
- 1 teaspoon salt
directions
- Wash and sort beans.
- Soak beans overnight.
- Drain soaking liquid.
- Place all ingredients in large pan.
- Cover with water, bring to a boil, reduce heat to simmer and cook 4-6 hours or until meat falls apart and is tender.

I loved the addition of pinto beans and the spices were mild enough for us gringos from New England. I think the beans absorb too much of the pork flavor. Next time I would brown the pork first and maybe even add some beef bouilon granules to boost the flavor. Thanks Bertha C for a great comfort food dish.

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time.
