Charleston Red Rice

"This is pure southern soul food. Its been made for generations in my family since the early 1900's. Every area of the south has a version of red rice but I saw that Zaar did not have a recipe quite like this one. I cannot get enough of this southern delight and thought you might like it as well."

  • Fry bacon and remove from the pan:

  • Saute'onions and peppers in the bacon grease;.
  • Add tomato paste water salt sugar and pepper.
  • Cook uncovered slowly about 5 minutes and then add the rice another 5 minutes until mixture is bubbly then pour into the top section of a rice steamer or you can use a very large Pyrex dish.
  • Pour mixture in and add the sausage and crumble up the bacon and mix into the rice mixture.
  • Cover and bake for 35- 45 minutes in a preheated oven at 350 degrees or steam in steamer.
  • I bake it now days but the family recipe says to steam it.

  1. This was so good - loads of flavor and finishing off the dish in the oven produced great texture in the rice. DH likes spicy dishes but this had way too much heat for even him. We put in only one of the two tablespoons of black pepper and found that we'll have to cut that back to 1/2 a tablespoon next time we prepare this (whimps). Great stuff!   2. First attempt didn't turn out so well, not sure why. Second time I made the dish, it turned out magnificent. Was very proud of my results.
     
  3. Can't get enough of this. I cut the onion to about half of one large onion, added a can of Rotel original tomatoes, increased water to 4 C., used scant 2 tsp. if that of sugar, also somewhat less than 2 tsp. of salt. Made it a few weeks ago for a reunion, today just because...................................wonderful both times.

  5. so I just made this awesome rice it came out wonderful I would definitely use this recipe over and over againit has lots of flavor the only thingI changed in the recipe was when the bacon was half done I went ahead and threw in the smoked sausageto make it a little crispy alsoso it wouldn't be so mushy in the rice. It came out great

I love snow skiing, mountain climbing,and archeology digs,most of which are not conducive to the south, so Its a good thing I love to travel! <br />Of course I love to cook and horde recipes like they are gold, I am also a member of the Society for Creative Anachronism's (SCA), where I am a baroness, painter of manuscripts, and leader of the local group. Thus my name. <br />One of the things I like doing in the SCA is cooking period food for 300 or so of my friends, after researching recipes and redacting them to suit modern taste. I have always been interested in different cultures and food is a wonderful way to experience a taste of someone else's world.
