Cheap Gfcf Nachos

"We eat this at least once a week because it is so cheap and easy! It is a variation on Sweet Onion and Beans, another recipe I have posted. This freezes VERY well and tastes great the second day!"

  • Soak beans in a bowl full of plenty of water overnight.
  • Drain and rinse beans and put into a large pot of boiling water, reduce heat, cover, and simmer for about 2 hours or until done. Add water as needed--you cannot add too much water!
  • Dice the onion, tomato, pepper, and garlic.
  • Add garlic, onions, salt, and oil to a fry pan over medium heat. Saute for about 5 minutes.
  • Add other vegetables and sugar and raise heat to medium-high, saute for another 5 minutes. Saute longer if you want mushier veggies (some kids will prefer this).
  • Add beans and chili powder and cook until heated through, then reduce heat to low, cover, and let it sit for about 5 minutes.
  • Serve hot over corn chips. Put some fresh cilantro on top if you have it!
