  • Preheat oven to 350°F.
  • Add salt and cabbage to the boiling water, stir and boil 2-3 minutes.
  • Remove from heat but do not drain.
  • In a bowl, combine eggs, vinegar and mayonnaise, mix in cabbage and cooking liquid.
  • Pour into a 1 quart casserole, top with cheese and potato chips and bake 25-30 minutes.

  1. Absolutely wonderful! DH loved it too. My picky daughter didn't care for it, but DH and I devoured it! The vinegar gave it such a lovely tanginess, and the potato chips made for a great texture. I'll definitely be making this again and again and again! Thanks for such a terrific recipe!

  2. I'm actually not that big of a cabbage fan, but my fiancé is so I made this for him. However, I loved this too!! I simply love vinegar, so just love the kick it gives this dish. It's definitely not lacking in flavour!
     
  3. This is not the same-old boring cabbage! This is tangy, cheesey and crunchy deliciousness! I loved the tang from the vinegar; it goes so well with the chips. If you like salt & vinegar potato chips or vinegar on your french fries, I think you'll love this. I'll be making this again. Thanx!
     
  4. This didn't go over very well at my house. I think it has a lot of potential but we all found the vinegar to be overpowering. If I make this again, I will do two things differently; add half as much vinegar, and mix part of the 'toppings' in with the cabbage mixture.

Looks like my grandma's Hot Slaw, steamed shredded cabbage dressed with pan juice, vinegar, beat in an egg, salt, pepper heat to lightly cook egg without curdling ... toss lightly, do not overcook or sauce will curdle. Be prepared to chill saucepan in a sinkful of cold water to prevent this..

  2. I used a pre shredded package of cabbage labeled for cole-slaw. It had a few shredded carrots in the package but I don't think that changed the recipe. More convenient and quick for me! My husband is watching carbs so didn't appreciate the crushed potato chips, he just scrapped them off. I will make it again without them. This dish was a side to ham balls that I purchased from our Fairway Meat counter. I wonder it the casserole would work well with ham mixed in--for a main dish casserole! I think I will try it with my left over Easter Ham!
